Instructions
- In a small bowl, whisk together pomegranate molasses, olive oil, lemon juice, sumac, salt, and pepper until smooth.
- Arrange the tomato slices in a shallow bowl or platter, slightly overlapping them for presentation.
- Scatter mint leaves and pomegranate seeds evenly over the tomatoes. Add red onion slices if using.
- Give the dressing a final whisk and drizzle generously over the salad.
