  • 2 tablespoons pomegranate molasses
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice

Instructions

  1. In a small bowl, whisk together pomegranate molasses, olive oil, lemon juice, sumac, salt, and pepper until smooth.
  2. Arrange the tomato slices in a shallow bowl or platter, slightly overlapping them for presentation.
  3. Scatter mint leaves and pomegranate seeds evenly over the tomatoes. Add red onion slices if using.
  4. Give the dressing a final whisk and drizzle generously over the salad.
