- 4 cups frozen pineapple chunks
- 1/2 cup full-fat coconut milk
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
Instructions
- Prepare your equipment and ensure the blender is ready for frozen fruit.
- Place frozen pineapple, coconut milk, honey or maple syrup, vanilla extract, and lemon juice into the blender.
- Pulse and blend, stopping occasionally to scrape down the sides with a rubber spatula so everything mixes evenly.
- Continue blending until the mixture is silky and has the texture of soft serve, adding a tablespoon of extra liquid only if necessary to help the blades move.
- Transfer the soft serve to a piping bag or scoop directly into chilled bowls or cones for immediate serving.
- For scoopable ice cream, place the mixture in a freezer-safe container and freeze for 1 to 2 hours until firm enough to scoop.
- If frozen solid, let sit at room temperature 5 to 10 minutes before scooping to soften slightly.
Notes
- Freeze pineapple in a single layer on a tray to avoid clumping and make blending easier.
- Chill serving bowls or cones to help the swirls hold their shape longer.
- Adjust sweetener to taste, especially if pineapple is very ripe and sweet.
- For extra creaminess, add one frozen banana to the blend.
