Instructions
- Heat your oil in a deep pot or fryer to 350°F (175°C).
- Wash, peel, and thinly slice the potatoes using a mandoline or sharp knife. Soak slices in a bowl of cold water for 20–30 minutes.
- Drain and dry the slices thoroughly with paper towels or clean cloths.
- Carefully add a handful of slices into the hot oil, avoiding overcrowding.
- Fry for 3 to 5 minutes until golden and curled, turning occasionally.
- Remove with a slotted spoon and place on paper towels or a cooling rack.
- While still hot, sprinkle with salt and toss gently.
- Serve immediately or allow to cool completely before storing.
