  • 1 pound ground beef (80 percent lean)
  • 4 brioche buns
  • 4 slices cheddar cheese
  • 1/3 cup honey
  • 1 teaspoon red pepper flakes
  • 1 teaspoon apple cider vinegar
  • 1/4 cup mayonnaise
  • 12 pickle slices
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat a cast iron skillet over high heat for about 5 minutes until very hot.
  2. In a small saucepan, gently warm the honey with red pepper flakes and apple cider vinegar for 2 to 3 minutes, then set aside.
  3. Lightly toast the brioche buns in the skillet until golden, then remove and set aside.
  4. Divide the ground beef into 4 equal balls without overworking the meat.
  5. Place each beef ball onto the hot skillet, smash firmly with a spatula, and season with salt and black pepper. Cook for 2 minutes until crispy on the bottom. Flip, add a slice of cheddar cheese, and cook another 1 to 2 minutes until melted.
  6. Spread mayonnaise on the bottom bun, add the cheesy patty, top with pickle slices, and drizzle generously with the warm hot honey.
  7. Close with the top bun and serve immediately while hot and crispy.

Notes

  • Smash the beef within the first 30 seconds of placing it on the skillet for the best crust.
  • Do not move the patties while they cook to ensure deep browning.
