Description
Classic Huevos Rancheros made with crispy corn tortillas, hearty black beans, perfectly cooked eggs, and a rich homemade ranchero sauce for a bold and satisfying breakfast or brunch.

- 4 small corn tortillas
- 4 large eggs
- 1 cup black beans, drained and rinsed
- 1 cup crushed tomatoes
- 2 cloves garlic, minced
- 1/2 cup onion, finely chopped
- 2 tablespoons olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh cilantro, chopped
Instructions
- Heat 1 tablespoon olive oil in a skillet over medium heat.
- Add the chopped onion and cook for 3 to 4 minutes until softened.
- Stir in the minced garlic, ground cumin, chili powder, salt, and black pepper. Cook for 1 minute until fragrant.
- Pour in the crushed tomatoes and simmer for 10 minutes until slightly thickened.
- Warm the black beans in a small saucepan over low heat until heated through.
- In a separate skillet, heat the remaining 1 tablespoon olive oil and lightly crisp the corn tortillas for about 1 minute per side. Remove and set aside.
- In the same skillet, cook the eggs sunny side up until the whites are set and the yolks remain slightly runny.
- Spread warm black beans over each tortilla.
- Spoon ranchero sauce over the beans.
- Place one cooked egg on top of each tortilla and garnish with fresh chopped cilantro. Serve immediately.
Notes
- For deeper flavor, allow the sauce to simmer a few extra minutes.
- Cook eggs gently to keep the yolks soft and creamy.
- The ranchero sauce can be made up to 3 days in advance and reheated before serving.
