Description

Classic Huevos Rancheros made with crispy corn tortillas, hearty black beans, perfectly cooked eggs, and a rich homemade ranchero sauce for a bold and satisfying breakfast or brunch.


Ingredients

  • 4 small corn tortillas
  • 4 large eggs
  • 1 cup black beans, drained and rinsed
  • 1 cup crushed tomatoes
  • 2 cloves garlic, minced
  • 1/2 cup onion, finely chopped
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium heat.
  2. Add the chopped onion and cook for 3 to 4 minutes until softened.
  3. Stir in the minced garlic, ground cumin, chili powder, salt, and black pepper. Cook for 1 minute until fragrant.
  4. Pour in the crushed tomatoes and simmer for 10 minutes until slightly thickened.
  5. Warm the black beans in a small saucepan over low heat until heated through.
  6. In a separate skillet, heat the remaining 1 tablespoon olive oil and lightly crisp the corn tortillas for about 1 minute per side. Remove and set aside.
  7. In the same skillet, cook the eggs sunny side up until the whites are set and the yolks remain slightly runny.
  8. Spread warm black beans over each tortilla.
  9. Spoon ranchero sauce over the beans.
  10. Place one cooked egg on top of each tortilla and garnish with fresh chopped cilantro. Serve immediately.

Notes

  • For deeper flavor, allow the sauce to simmer a few extra minutes.
  • Cook eggs gently to keep the yolks soft and creamy.
  • The ranchero sauce can be made up to 3 days in advance and reheated before serving.
