- 1 ½ pounds ground beef (80/20 blend)
- 2 medium yellow onions, thinly sliced
- 2 large fresh jalapeños, thinly sliced
- 1 ½ teaspoons salt
- 1 teaspoon freshly cracked black pepper
- 6 slices cheddar cheese
- 6 soft potato buns
- 1 tablespoon vegetable oil
- ¼ cup mayonnaise (optional)
Instructions
- Heat a cast iron skillet or griddle over medium-high heat until very hot.
- Add vegetable oil and sauté the onions and jalapeños until caramelized and tender, about 8–10 minutes. Season lightly with salt and pepper. Set aside.
- Wipe out the skillet if necessary and bring it back to high heat.
- Divide the ground beef into 6 loose balls. Season each with salt and pepper.
- Place beef balls on the hot skillet and immediately smash flat with a metal spatula. Let sear undisturbed for 2–3 minutes.
- Flip patties, top each with cheddar cheese, and cook for another minute until the cheese melts.
- Toast the buns cut-side down on the skillet until golden.
- Spread mayonnaise on the bottom bun if using, then layer the burger patty, jalapeño-onion mixture, and top bun.
- Serve hot with your favorite sides.
Notes
- Use parchment paper between the spatula and meat to prevent sticking.
- Make onions and jalapeños ahead of time and store in the fridge.
- Customize spice level by using fewer jalapeños or swapping for milder peppers.
