Description

Juicy, crispy-edged smash burgers topped with caramelized onions and jalapeños, melted cheddar, and sandwiched in toasted buns — a spicy, savory explosion in every bite.


Ingredients

  • 1 ½ pounds ground beef (80/20 blend)
  • 2 medium yellow onions, thinly sliced
  • 2 large fresh jalapeños, thinly sliced
  • 1 ½ teaspoons salt
  • 1 teaspoon freshly cracked black pepper
  • 6 slices cheddar cheese
  • 6 soft potato buns
  • 1 tablespoon vegetable oil
  • ¼ cup mayonnaise (optional)

Instructions

  1. Heat a cast iron skillet or griddle over medium-high heat until very hot.
  2. Add vegetable oil and sauté the onions and jalapeños until caramelized and tender, about 8–10 minutes. Season lightly with salt and pepper. Set aside.
  3. Wipe out the skillet if necessary and bring it back to high heat.
  4. Divide the ground beef into 6 loose balls. Season each with salt and pepper.
  5. Place beef balls on the hot skillet and immediately smash flat with a metal spatula. Let sear undisturbed for 2–3 minutes.
  6. Flip patties, top each with cheddar cheese, and cook for another minute until the cheese melts.
  7. Toast the buns cut-side down on the skillet until golden.
  8. Spread mayonnaise on the bottom bun if using, then layer the burger patty, jalapeño-onion mixture, and top bun.
  9. Serve hot with your favorite sides.

Notes

  • Use parchment paper between the spatula and meat to prevent sticking.
  • Make onions and jalapeños ahead of time and store in the fridge.
  • Customize spice level by using fewer jalapeños or swapping for milder peppers.
