- 500 g cooked chicken, shredded
- 2 medium leeks, finely sliced
- 2 carrots, diced
- 2 garlic cloves, minced
- 50 g butter
- 2 tablespoons plain flour
- 300 ml chicken stock
- 100 ml double cream
- 1 teaspoon fresh thyme
- 1 sheet ready-made puff pastry, thawed
- 1 egg, beaten
- Salt and pepper to taste
Instructions
- Preheat oven to 200°C (400°F) and grease a medium pie dish with butter.
- In a saucepan, melt butter and sauté garlic, leeks, and carrots until soft.
- Stir in flour, then gradually whisk in chicken stock and cream until smooth.
- Add shredded chicken and thyme, season with salt and pepper, then let the mixture cool slightly.
- Pour filling into the prepared pie dish and cover with puff pastry. Trim and crimp edges, cutting small slits for steam.
- Brush top with beaten egg and bake for 25–30 minutes, until golden brown and puffed.
- Let it rest for 5 minutes before serving.

- Cool the filling before adding pastry to avoid soggy crust.
- For extra flavor, stir in a bit of mustard or grated cheese.
