Description

Ingredients

  • 500 g cooked chicken, shredded
  • 2 medium leeks, finely sliced
  • 2 carrots, diced
  • 2 garlic cloves, minced
  • 50 g butter
  • 2 tablespoons plain flour
  • 300 ml chicken stock
  • 100 ml double cream
  • 1 teaspoon fresh thyme
  • 1 sheet ready-made puff pastry, thawed
  • 1 egg, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 200°C (400°F) and grease a medium pie dish with butter.
  2. In a saucepan, melt butter and sauté garlic, leeks, and carrots until soft.
  3. Stir in flour, then gradually whisk in chicken stock and cream until smooth.
  4. Add shredded chicken and thyme, season with salt and pepper, then let the mixture cool slightly.
  5. Pour filling into the prepared pie dish and cover with puff pastry. Trim and crimp edges, cutting small slits for steam.
  6. Brush top with beaten egg and bake for 25–30 minutes, until golden brown and puffed.
  7. Let it rest for 5 minutes before serving.
