Ingredients

  • 1 cup All-Purpose Flour
  • 1/2 cup Unsalted Butter, cold and cubed
  • 1/4 cup Powdered Sugar
  • 1 cup Granulated Sugar
  • 3 large Eggs
  • 1/2 cup Fresh Lemon Juice
  • 1 tablespoon Lemon Zest
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Baking Powder
  • Extra Powdered Sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 or 9×9 inch baking dish and line with parchment paper.
  2. In a bowl, mix flour, powdered sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Press the crust mixture evenly into the bottom of the baking dish. Bake for 15 minutes until lightly golden.
  4. While the crust bakes, whisk together eggs, granulated sugar, lemon juice, lemon zest, flour, and baking powder until smooth.
  5. Pour the lemon filling over the hot crust. Return to oven and bake for 20 to 25 minutes until the center is set but slightly jiggly.
  6. Cool completely, then chill for 1 hour. Dust with powdered sugar before slicing.
