- 2 cups all-purpose flour (for crust)
- 1/4 cup all-purpose flour (for filling)
- 1 cup unsalted butter, cold and cubed
- 1/2 cup powdered sugar
- 1 1/2 cups granulated sugar
- 4 large eggs
- 3/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- Pinch of salt
- Powdered sugar (for dusting)
Instructions
- Preheat oven to 350°F (175°C) and grease or line a 9×13 inch baking dish.
- In a bowl, combine 2 cups flour, 1/2 cup powdered sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- Press the crust mixture evenly into the baking dish and bake for 18–20 minutes until lightly golden.
- While crust bakes, whisk eggs, 1 1/2 cups granulated sugar, 1/4 cup flour, lemon juice, and lemon zest until smooth.
- Pour the lemon mixture over the hot crust and bake for another 20–25 minutes until just set.
- Let cool completely, chill for 1 hour, then dust with powdered sugar before slicing.
Notes
- Chill before cutting for clean slices.
- Use fresh lemon juice for the best flavor.
- Dust with powdered sugar just before serving to avoid melting into the top.
