- 2½ cups all-purpose flour
- 1 cup granulated sugar
- 1 cup unsalted butter, cold and cubed
- ½ teaspoon salt
- ½ cup freshly squeezed lemon juice
- Zest from 2 lemons
- 3 large eggs
- 3 tablespoons all-purpose flour (for filling)
- ½ teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
- In a bowl, mix flour, sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.
- Press half of the crumb mixture into the bottom of the baking pan to form the base.
- In another bowl, whisk together eggs, lemon juice, zest, sugar, and flour until smooth.
- Pour the lemon filling over the pressed base and sprinkle the remaining crumb mixture on top.
- Bake for 35 to 40 minutes until the top is lightly golden and the filling is just set.
- Cool completely before slicing. Chill for cleaner cuts if desired.
- Serve chilled or at room temperature, optionally dusted with powdered sugar.
