Description

These Lemon Crumb Bars are a bright and buttery treat, with a soft lemony filling nestled between layers of golden crumb. Easy to make and full of citrus sunshine in every bite.


Ingredients

  • 2½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, cold and cubed
  • ½ teaspoon salt
  • ½ cup freshly squeezed lemon juice
  • Zest from 2 lemons
  • 3 large eggs
  • 3 tablespoons all-purpose flour (for filling)
  • ½ teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a bowl, mix flour, sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Press half of the crumb mixture into the bottom of the baking pan to form the base.
  4. In another bowl, whisk together eggs, lemon juice, zest, sugar, and flour until smooth.
  5. Pour the lemon filling over the pressed base and sprinkle the remaining crumb mixture on top.
  6. Bake for 35 to 40 minutes until the top is lightly golden and the filling is just set.
  7. Cool completely before slicing. Chill for cleaner cuts if desired.
  8. Serve chilled or at room temperature, optionally dusted with powdered sugar.
