Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • Zest and juice of 1 lemon
  • 1/2 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1/2 tsp paprika
  • 3 tbsp butter, divided
  • 3 cloves garlic, minced
  • Fresh parsley, chopped, for garnish
  • 8 oz linguine
  • 2 tbsp butter
  • 3/4 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • Salt and pepper, to taste
  • 1/2 tsp garlic powder
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook linguine according to package directions until al dente. Drain and set aside.
  2. In a bowl, season chicken with lemon zest, lemon juice, Italian seasoning, paprika, salt, and pepper.
  3. Heat 2 tablespoons of butter in a large skillet over medium-high heat. Add chicken and cook for 5–6 minutes until golden and cooked through. Add minced garlic and cook for another 30 seconds. Remove chicken and set aside.
  4. In the same skillet, reduce heat to medium and melt 2 tablespoons of butter. Stir in heavy cream, garlic powder, Parmesan cheese, salt, and pepper. Simmer for 2–3 minutes until creamy and smooth.
  5. Add cooked linguine to the sauce and toss to coat. Return chicken to the skillet and gently mix everything together.
  6. Garnish with fresh parsley and serve immediately.

  • Add spinach or mushrooms for extra veggies.
