Description

  • 16 ounces mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/2 cup limoncello
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. In a large mixing bowl, beat the mascarpone cheese and granulated sugar until smooth and creamy.
  2. In a separate bowl, whip the heavy cream until soft peaks form.
  3. Gently fold the whipped cream into the mascarpone mixture until fully combined.
  4. Stir in the lemon zest and mix gently.
  5. In a shallow dish, combine the limoncello and fresh lemon juice.
  6. Quickly dip each ladyfinger into the limoncello mixture, making sure not to oversoak.
  7. Arrange a layer of soaked ladyfingers in the bottom of a medium rectangular baking dish.
  8. Spread half of the mascarpone cream mixture evenly over the ladyfingers.
  9. Repeat with another layer of soaked ladyfingers and the remaining cream mixture, smoothing the top.
  10. Cover and refrigerate for at least 6 hours or overnight before slicing and serving.
