Instructions
- In a large mixing bowl, beat the mascarpone cheese and granulated sugar until smooth and creamy.
- In a separate bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the mascarpone mixture until fully combined.
- Stir in the lemon zest and mix gently.
- In a shallow dish, combine the limoncello and fresh lemon juice.
- Quickly dip each ladyfinger into the limoncello mixture, making sure not to oversoak.
- Arrange a layer of soaked ladyfingers in the bottom of a medium rectangular baking dish.
- Spread half of the mascarpone cream mixture evenly over the ladyfingers.
- Repeat with another layer of soaked ladyfingers and the remaining cream mixture, smoothing the top.
- Cover and refrigerate for at least 6 hours or overnight before slicing and serving.
