- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes
- 1 can (14 ounces) crushed tomatoes
- 2 cans (5 ounces each) tuna in olive oil, drained
- 1/2 cup black olives, sliced
- 2 tablespoons capers, drained
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt, or to taste
- 1/2 teaspoon freshly ground black pepper
Instructions
- Bring a large pot of salted water to a rolling boil over high heat.
- In a deep skillet over medium heat, add olive oil and minced garlic. Cook for 1 minute until fragrant, then stir in crushed red pepper flakes.
- Pour in the crushed tomatoes, add salt and black pepper, and let the sauce simmer gently for 10 minutes.
- Add sliced olives and capers to the sauce. Gently fold in the drained tuna, keeping some chunks intact.
- Cook linguine according to package instructions until al dente, about 9 to 10 minutes. Reserve 1/2 cup pasta water, then drain.
- Toss the drained linguine directly into the sauce, adding a splash of reserved pasta water if needed to loosen.
- Sprinkle chopped parsley over the pasta, toss lightly, and serve warm.
Notes
- Use tuna packed in olive oil for richer flavor and better texture.
- Do not rinse the pasta after cooking, the starch helps the sauce cling beautifully.
- Taste the sauce before adding extra salt, olives and capers already contain salt.
- Reserve pasta water to adjust the consistency when reheating leftovers.
