- 4 medium Russet Potatoes
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 ½ cups Cheddar Cheese, shredded
- ½ cup Sour Cream
- 2 Green Onions, finely sliced
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment or foil.
- Shred the cheese and slice the green onions. Set aside.
- Wash potatoes, prick with a fork, and bake directly on the oven rack for 45 minutes or until fork-tender.
- Let potatoes cool slightly, slice in half lengthwise, and scoop out the centers, leaving about ¼ inch of potato around the edges.
- Brush both sides with olive oil, sprinkle with salt, and place cut-side down on the baking sheet. Bake for 10 minutes, flip, and bake another 10 minutes.
- Turn over again, fill with shredded cheese, and bake for 5 minutes more until melted and bubbly.
- Remove from oven, top with sour cream and green onions, and serve warm.
Notes
- Leave a thin layer of potato inside the skin for sturdiness.
- Don’t skip oiling the skins for maximum crispiness.
- Reheat leftovers in the oven for best texture.
- Use parchment or foil to minimize sticking and cleanup.
