Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 large egg
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/3 cup chopped sun-dried tomatoes
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated parmesan cheese (for sauce)
  • Pinch of crushed red pepper (optional)
  • Fresh basil or parsley, for garnish

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, parmesan, egg, garlic, Italian seasoning, salt, and pepper. Mix gently until just combined.
  2. Form the mixture into 1-inch meatballs and set aside.
  3. Heat olive oil in a skillet over medium heat and brown the meatballs on all sides, about 6-8 minutes. Remove and set aside.
  4. In the same skillet, sauté garlic and sun-dried tomatoes for 1 minute.
  5. Add chicken broth and heavy cream, then stir in parmesan and crushed red pepper. Simmer until the sauce thickens slightly.
  6. Return the meatballs to the pan, coat them in the sauce, and simmer for 5-7 minutes until cooked through.
  7. Garnish with fresh basil or parsley and serve warm.
