  • 2 cups mashed potatoes (for topping)
  • 2 tbsp butter
  • 23 tbsp milk or cream
  • Salt, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with foil liners.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, chopped onion, egg, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix until just combined—don’t overmix.
  3. Divide mixture evenly into muffin cups, pressing down slightly to shape.
  4. Top each meatloaf cupcake with a small spoonful of ketchup or BBQ sauce.
  5. Bake for 20–25 minutes or until meat is cooked through (internal temp of 160°F/71°C).
  6. Meanwhile, prepare mashed potatoes by combining cooked potatoes with butter, milk or cream, and salt. Beat until smooth and fluffy.
  7. Once meatloaf cupcakes are done, let them cool slightly. Pipe or spoon mashed potatoes on top like frosting.
  8. Optional: sprinkle with shredded cheddar or parsley before serving.
