Description
A delicious combination of savory, sweet, and fresh flavors, this Mexican glazed salmon with mango salsa is a quick and easy weeknight dinner option that will impress everyone at the table.
Ingredients
Scale
- 4 salmon fillets (6 oz each)
- 1 ripe mango, diced
- 1 lime, juiced
- 2 tbsp chopped cilantro
- 2 cloves garlic, minced
- 2 tbsp honey
- 2 tbsp soy sauce
- 1 tsp chili powder
- 1 tbsp olive oil
Instructions
- Preheat Your Equipment: Preheat your pan to medium-high heat.
- Combine Ingredients: In a small bowl, mix the honey, soy sauce, garlic, and chili powder to create the glaze. Set it aside.
- Prepare Your Cooking Vessel: Heat olive oil in the preheated pan. Make sure it’s hot before adding the salmon fillets to get a good sear.
- Assemble the Dish: While the salmon cooks, combine the diced mango, chopped cilantro, and lime juice in a bowl. Set the salsa aside to allow the flavors to blend.
- Cook to Perfection: Place the salmon fillets skin-side down in the pan and cook for 4-5 minutes. Flip the fillets and cook for another 3-4 minutes, basting with the glaze.
- Finishing Touches: Once the salmon is cooked through, drizzle the remaining glaze over the fish and let it rest for a minute.
- Serve and Enjoy: Plate the salmon fillets and top them with the fresh mango salsa. Serve with a side of rice or vegetables for a complete meal.
Notes
- For extra crispiness, cook the salmon skin-side down for a few extra minutes.
- If you prefer a thicker glaze, let it simmer longer to reduce it before applying it to the salmon.
- Leftover salmon can be transformed into a delicious fish taco filling or added to a salad for a light lunch the next day.
