- 1 can (14 ounces) sweetened condensed milk
- 1 can (20 ounces) crushed pineapple, well drained
- 1 cup shredded sweetened coconut
- 1/2 cup chopped pecans, plus extra for topping
- 2 tablespoons fresh lemon juice
- 1 container (8 ounces) whipped topping
- 6 to 8 maraschino cherries, for garnish
Instructions
- Place a large mixing bowl on the counter and add the sweetened condensed milk and fresh lemon juice. Stir until smooth and combined.
- Add the well drained crushed pineapple, shredded sweetened coconut, and chopped pecans to the bowl. Stir until evenly distributed.
- Gently fold in the whipped topping until the mixture is light and fully combined.
- Spoon the filling into the prepared graham cracker crust and spread it evenly with a spatula.
- Garnish the top with extra chopped pecans and maraschino cherries.
- Refrigerate the pie for at least 4 hours or until fully set.
- Slice and serve chilled for best texture and flavor.
