  • 3 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup sour cream
  • 1 teaspoon peppermint extract
  • 1 drop green food coloring (optional)
  • Whipped cream, for topping

Instructions

  1. Preheat the oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. In a bowl, mix crushed cookies with melted butter until combined. Press a spoonful into each liner to form the crust.
  3. Bake crusts for 5 minutes, then let cool slightly.
  4. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  5. Stir in sour cream, peppermint extract, and food coloring.
  6. Divide the mixture among liners, filling each nearly to the top.
  7. Bake for 18–20 minutes or until centers are just set.
  8. Cool completely on a rack, then chill in the fridge for at least 2 hours.
  9. Top with whipped cream and chocolate shavings before serving.
