Mini Reuben Bites

  • Total Time: 25 minutes
  • Yield: 12 bites 1x
  • Diet: Halal

Description

Golden, crispy Mini Reuben Bites with chopped corned beef, tangy sauerkraut, melted Swiss cheese, and a touch of Thousand Island, baked in mini rye bread cups for a poppable, party-ready appetizer.

Ingredients

Scale
  • 1 cup chopped corned beef
  • 1/2 cup sauerkraut, well drained
  • 1 cup shredded Swiss cheese
  • 1/4 cup Thousand Island dressing
  • 1 package mini rye bread rounds or crescent dough, enough to line 12 mini muffin cups
  • 2 tablespoons melted butter
  • Optional: pinch of caraway seeds for sprinkling

Instructions

  1. Preheat Your Equipment: Preheat oven to 375°F (190°C).
  2. Combine Ingredients: In a mixing bowl, combine 1 cup chopped corned beef, 1/2 cup well-drained sauerkraut, 1 cup shredded Swiss cheese, and 1/4 cup Thousand Island dressing. Mix until evenly combined.
  3. Prepare Your Cooking Vessel: Lightly grease a mini muffin tin. Press mini rye bread rounds or pieces of crescent dough into each cup to form a small shell.
  4. Assemble the Dish: Spoon the filling mixture into each prepared bread cup, filling to the top but not overflowing.
  5. Cook to Perfection: Bake in the preheated oven for 12 to 15 minutes, until the cheese is melted and the edges of the bread are golden brown.
  6. Finishing Touches: Remove from oven and brush the tops lightly with 2 tablespoons melted butter. Sprinkle a pinch of caraway seeds on top if using. Let cool for about 1 minute so they hold their shape.
  7. Serve and Enjoy: Serve warm with extra Thousand Island dressing for dipping and enjoy immediately.

Notes

  • Drain the sauerkraut thoroughly to prevent sogginess.
  • For extra crispness, lightly toast the bread cups before filling.
  • Assemble ahead and refrigerate up to 24 hours, then bake before serving.
  • Freeze baked bites on a tray until firm, then store in a freezer bag for longer keeping; reheat in oven until warmed through.
