Ingredients

- 3 to 4 pounds chuck roast
- 1 packet (1 ounce) ranch dressing mix
- 1 packet (1 ounce) au jus gravy mix
- 6 to 8 whole pepperoncini peppers
- 1/4 cup pepperoncini juice
- 1/2 cup (1 stick) unsalted butter
- Salt, to taste
- 1/2 teaspoon black pepper
Instructions
- Optional: Sear the chuck roast in a hot skillet for 2–3 minutes per side to develop flavor.
- Place the roast in a slow cooker. Sprinkle the ranch and au jus seasoning mixes evenly over the top.
- Add the pepperoncini peppers and pour in the juice around the roast.
- Place the stick of butter on top of the meat.
- Cover and cook on low for 8 hours or high for 4–5 hours, until the meat is fork-tender.
- Shred the beef with two forks and stir it into the juices. Let it sit for 5–10 minutes before serving.
Notes
- Do not add any water or broth—the roast creates its own flavorful gravy.
- For a thicker sauce, stir in a cornstarch slurry at the end.
- Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months.
