Description

Soft and chewy Olive Oil Chocolate Chip Cookies made with rich extra virgin olive oil instead of butter for a tender texture and subtle depth of flavor. Crisp on the edges, gooey in the center, and packed with melty chocolate chips.


Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 3/4 cup olive oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a separate large bowl, whisk together the olive oil, granulated sugar, and brown sugar until smooth and well combined.
  4. Add the eggs and vanilla extract to the wet mixture and whisk until fully incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
  6. Fold in the chocolate chips evenly throughout the dough.
  7. Scoop tablespoon sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10 to 12 minutes, until the edges are golden and the centers look slightly soft.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
