  • 3 cloves garlic, minced
  • 2 tablespoons harissa paste
  • 1 tablespoon tomato paste
  • 1 can (14 ounces) diced tomatoes
  • 2 cans (15 ounces each) chickpeas, drained and rinsed
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 4 slices rustic bread

Instructions

  1. Place a large skillet over medium heat and allow it to warm gently.
  2. Measure out the harissa paste and tomato paste in a small bowl so they are ready to use.
  3. Add olive oil to the skillet. Once warm, sauté the minced garlic for about 1 minute until fragrant.
  4. Stir in the harissa paste and tomato paste, cooking for 1 to 2 minutes to deepen the flavor. Add diced tomatoes and chickpeas, then season with salt and black pepper. Stir well.
  5. Bring the mixture to a gentle simmer. Cook for 10 to 15 minutes, stirring occasionally, until slightly thickened.
  6. Lower the heat and pour in the heavy cream. Stir gently until the sauce becomes creamy and cohesive. Simmer for 3 to 5 more minutes.
  7. Sprinkle with chopped parsley and serve warm with slices of rustic bread.

  • For a dairy free option, substitute heavy cream with full fat coconut milk.
