Description
Creamy, smoky, and gently spiced chickpeas simmered in a rich harissa tomato sauce, finished with heavy cream and fresh parsley. This one-pan dish is bold yet comforting, perfect for scooping up with warm rustic bread.
Ingredients
Scale
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons harissa paste
- 1 tablespoon tomato paste
- 1 can (14 ounces) diced tomatoes
- 2 cans (15 ounces each) chickpeas, drained and rinsed
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- 4 slices rustic bread
Instructions
- Place a large skillet over medium heat and allow it to warm gently.
- Measure out the harissa paste and tomato paste in a small bowl so they are ready to use.
- Add olive oil to the skillet. Once warm, sauté the minced garlic for about 1 minute until fragrant.
- Stir in the harissa paste and tomato paste, cooking for 1 to 2 minutes to deepen the flavor. Add diced tomatoes and chickpeas, then season with salt and black pepper. Stir well.
- Bring the mixture to a gentle simmer. Cook for 10 to 15 minutes, stirring occasionally, until slightly thickened.
- Lower the heat and pour in the heavy cream. Stir gently until the sauce becomes creamy and cohesive. Simmer for 3 to 5 more minutes.
- Sprinkle with chopped parsley and serve warm with slices of rustic bread.
Notes
- For a dairy free option, substitute heavy cream with full fat coconut milk.
- Taste before adding extra salt since harissa brands vary in saltiness.
- If the sauce thickens too much, add a splash of water to loosen it.
- Leftovers taste even better the next day as the flavors deepen.
