- 2 tablespoons olive oil
- 1 tablespoon butter
- 3 garlic cloves, minced
- 1 pound shrimp, peeled and deveined
- 1 cup orzo pasta
- 3 cups chicken broth
- ¾ cup grated parmesan cheese
- 1 tablespoon lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Heat a large skillet over medium heat. Add olive oil and butter, letting it melt and shimmer.
- Sauté garlic for 30 seconds until fragrant. Add shrimp, season with salt and pepper, and cook until pink, about 2 minutes per side. Remove and set aside.
- Add orzo to the pan and toast for 1–2 minutes, stirring frequently.
- Pour in the chicken broth and bring to a simmer, scraping the bottom of the pan to release any bits.
- Cover and cook for 10–12 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
- Stir in parmesan and lemon juice. Return shrimp to the pan and cook for 1 minute more until heated through.
- Garnish with fresh parsley and serve warm.
Notes
- Add a splash of broth when reheating to keep the orzo creamy.
- Freshly grated parmesan melts best and adds richer flavor.
- You can toss in spinach or peas for added veggies.
