Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 garlic cloves, minced
  • 1 pound shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • ¾ cup grated parmesan cheese
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat a large skillet over medium heat. Add olive oil and butter, letting it melt and shimmer.
  2. Sauté garlic for 30 seconds until fragrant. Add shrimp, season with salt and pepper, and cook until pink, about 2 minutes per side. Remove and set aside.
  3. Add orzo to the pan and toast for 1–2 minutes, stirring frequently.
  4. Pour in the chicken broth and bring to a simmer, scraping the bottom of the pan to release any bits.
  5. Cover and cook for 10–12 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
  6. Stir in parmesan and lemon juice. Return shrimp to the pan and cook for 1 minute more until heated through.
  7. Garnish with fresh parsley and serve warm.

Notes

  • Add a splash of broth when reheating to keep the orzo creamy.
  • Freshly grated parmesan melts best and adds richer flavor.
