Description

A comforting and flavorful one pot chicken and rice dish made with tender chicken thighs, fluffy long grain rice, vegetables, and warm spices. Perfect for an easy family dinner with minimal cleanup.


Ingredients

  • 6 bone-in, skinless chicken thighs (about 900 grams)
  • 1 1/2 cups long grain rice (about 300 grams)
  • 3 cups chicken broth (about 720 milliliters)
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 1 cup green peas (about 150 grams)
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil (about 30 milliliters)
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat a large heavy pot over medium heat.
  2. Season the chicken thighs on both sides with salt, black pepper, and paprika.
  3. Add olive oil to the pot and sear the chicken for 4 to 5 minutes per side until golden brown. Remove and set aside.
  4. In the same pot, sauté the chopped onion, diced carrots, and minced garlic until softened.
  5. Stir in the rice and toast for 1 to 2 minutes.
  6. Pour in the chicken broth and stir gently. Nestle the chicken back into the pot and scatter the peas on top.
  7. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 20 to 25 minutes until the rice is tender and the chicken is fully cooked.
  8. Turn off the heat and let rest covered for 5 minutes. Sprinkle with fresh parsley.
  9. Fluff the rice gently with a fork and serve warm.
