Ooey-Gooey Cinnamon Roll Cheesecake Bars combine the sweet, spiced flavors of cinnamon rolls with a rich, creamy cheesecake layer, all baked into soft, gooey perfection for an irresistible dessert.

- 2 cans (8 oz each) refrigerated cinnamon rolls with icing
- 2 packages (8 oz each) cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1/2 teaspoon ground cinnamon
- 2 tablespoons all-purpose flour
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Open one can of cinnamon rolls and press them evenly into the bottom of the baking dish, sealing any seams.
- In a mixing bowl, beat cream cheese, sugar, vanilla extract, egg, cinnamon, and flour until smooth and creamy.
- Spread the cheesecake mixture evenly over the cinnamon roll layer.
- Open the second can of cinnamon rolls, cut each into quarters, and arrange them evenly over the cheesecake layer.
- Bake for 25–30 minutes, or until the cinnamon rolls are golden brown and the cheesecake layer is set.
- Cool for 15 minutes, then drizzle with the icing from the cinnamon roll cans.
- Slice into bars and serve warm or chilled.
Notes
- For extra gooeyness, slightly underbake and let them finish setting as they cool.
- Top with extra cream cheese frosting for more indulgence.
- These bars store well in the refrigerator for up to 4 days.
