Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, toss potatoes and onions with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Spread the mixture evenly on the baking sheet in a single layer, keeping the potatoes cut-side down.
- Roast for 35 to 40 minutes, flipping halfway through, until potatoes are golden and tender.
- Remove from the oven and sprinkle with fresh parsley.
