Description

Ingredients

  • Spaghetti: 400g
  • Olive Oil: 3 tablespoons
  • Garlic: 3 cloves, minced
  • Cherry Tomatoes: 300g, halved
  • Heavy Cream: 150ml
  • Parmesan Cheese: 60g, freshly grated
  • Salt and Black Pepper: to taste
  • Fresh Basil: a handful
  • Pasta Water: 1/2 cup

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  3. Add halved cherry tomatoes and cook until they soften and release their juices.
  4. Pour in the heavy cream and stir gently until the sauce begins to thicken.
  5. Add the cooked pasta directly into the sauce, tossing to coat evenly.
  6. Gradually add the reserved pasta water to help the sauce cling to the pasta.
  7. Stir in grated Parmesan, season with salt and pepper, and toss again.
  8. Garnish with fresh basil and a drizzle of olive oil before serving.
