Ingredients
- Spaghetti: 400g
- Olive Oil: 3 tablespoons
- Garlic: 3 cloves, minced
- Cherry Tomatoes: 300g, halved
- Heavy Cream: 150ml
- Parmesan Cheese: 60g, freshly grated
- Salt and Black Pepper: to taste
- Fresh Basil: a handful
- Pasta Water: 1/2 cup
Instructions
- Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Reserve 1/2 cup of pasta water, then drain.
- In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Add halved cherry tomatoes and cook until they soften and release their juices.
- Pour in the heavy cream and stir gently until the sauce begins to thicken.
- Add the cooked pasta directly into the sauce, tossing to coat evenly.
- Gradually add the reserved pasta water to help the sauce cling to the pasta.
- Stir in grated Parmesan, season with salt and pepper, and toss again.
- Garnish with fresh basil and a drizzle of olive oil before serving.

- Use freshly grated Parmesan for the best melting texture.
