Description

  • 170 grams dark chocolate, chopped
  • 113 grams unsalted butter
  • 100 grams granulated sugar
  • 2 large whole eggs
  • 2 large egg yolks
  • 30 grams all purpose flour
  • 4 tablespoons creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 220 degrees Celsius, 425 degrees Fahrenheit. Grease four ramekins generously and place them on a baking sheet.
  2. Melt the dark chocolate and butter together in a heatproof bowl over gentle heat, stirring until smooth. Remove from heat and whisk in the sugar.
  3. Add the whole eggs and egg yolks one at a time, whisking well after each addition. Stir in the vanilla extract and salt.
  4. Gently fold in the flour until just combined and smooth.
  5. Spoon batter into each ramekin halfway. Add one tablespoon of creamy peanut butter into the center of each ramekin, then cover with the remaining batter.
  6. Bake for 10 to 12 minutes until the edges are set but the centers remain soft and slightly jiggly.
  7. Let the cakes rest for 1 minute. Carefully run a knife around the edges and invert onto plates. Serve immediately while warm and molten.
