- 1 cup creamy peanut butter
- 2 cups mini marshmallows
- 1/2 cup powdered sugar
- 2 tablespoons unsalted butter, softened
- 1 teaspoon vanilla extract
- Pinch of flaky sea salt, optional for topping
Instructions
- Line a 12-cup muffin tin with paper liners and set aside.
- In a mixing bowl, stir together peanut butter, powdered sugar, softened butter, and vanilla until smooth and creamy. Fold in the mini marshmallows.
- Melt half of the chocolate chips in a microwave-safe bowl in 20–30 second bursts, stirring between each, until smooth. Alternatively, melt gently over a double boiler.
- Spoon a thin layer of melted chocolate into each liner, tilting to coat the bottom evenly.
- Divide the peanut butter marshmallow mixture among the cups, pressing lightly to level without touching the sides.
- Melt the remaining chocolate and spoon over the filling to cover completely. Tap the pan gently to smooth the tops. Sprinkle with a pinch of flaky sea salt if using.
- Chill until set, about 30–40 minutes. Peel off liners and serve chilled or at cool room temperature.

- Note: For extra shine, stir 1 teaspoon neutral coconut oil into the melted chocolate.
- Use silicone liners for ultra-smooth edges and easy release.
