Description

Creamy peanut butter and fluffy mini marshmallows tucked inside snappy layers of silky semi-sweet chocolate. No-bake, playful, and irresistibly nostalgic, these cups set up in the fridge for an easy crowd-pleasing treat.

  • 1 cup creamy peanut butter
  • 2 cups mini marshmallows
  • 1/2 cup powdered sugar
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • Pinch of flaky sea salt, optional for topping

Instructions

  1. Line a 12-cup muffin tin with paper liners and set aside.
  2. In a mixing bowl, stir together peanut butter, powdered sugar, softened butter, and vanilla until smooth and creamy. Fold in the mini marshmallows.
  3. Melt half of the chocolate chips in a microwave-safe bowl in 20–30 second bursts, stirring between each, until smooth. Alternatively, melt gently over a double boiler.
  4. Spoon a thin layer of melted chocolate into each liner, tilting to coat the bottom evenly.
  5. Divide the peanut butter marshmallow mixture among the cups, pressing lightly to level without touching the sides.
  6. Melt the remaining chocolate and spoon over the filling to cover completely. Tap the pan gently to smooth the tops. Sprinkle with a pinch of flaky sea salt if using.
  7. Chill until set, about 30–40 minutes. Peel off liners and serve chilled or at cool room temperature.

  • Note: For extra shine, stir 1 teaspoon neutral coconut oil into the melted chocolate.
