Description
Perfect French Chateaubriand is an elegant, center-cut tenderloin roast seared to perfection and served with a rich Dijon-infused sauce. It’s a classic French dish that’s tender, flavorful, and surprisingly easy to make at home.

- 2 pounds beef tenderloin (center-cut)
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons olive oil
- 4 garlic cloves, smashed
- 4 sprigs fresh thyme
- 3 tablespoons unsalted butter
- 2 shallots, finely chopped
- 1 cup beef stock
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat your oven to 400°F and let the beef tenderloin come to room temperature for 30 minutes.
- Season the tenderloin with salt and pepper.
- In a cast-iron skillet, heat olive oil with garlic and thyme over medium-high heat.
- Sear the tenderloin on all sides for 2–3 minutes per side. Add butter and baste for 1 minute.
- Transfer skillet to the oven and roast for 12–15 minutes, or until internal temperature reaches 125°F for medium-rare.
- Remove from oven and rest the meat under foil for 10–15 minutes.
- In a saucepan, sauté shallots in butter, add beef stock and Dijon mustard, and simmer until reduced and thickened. Stir in parsley.
- Slice the rested beef into medallions and serve with the warm sauce.
