- 4 cups green tomatoes, thinly sliced
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon fresh lemon juice
- 2 tablespoons unsalted butter, cut into small pieces
- 2 pie crusts
Instructions
- Preheat the oven to 375°F and position a rack in the center.
- In a large bowl, combine the sliced green tomatoes, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Mix gently until evenly coated.
- Line a pie dish with one pie crust, pressing it gently into place.
- Pour the tomato filling into the crust and spread it evenly.
- Dot the filling with small pieces of butter.
- Cover with the second crust, seal and crimp the edges, and cut small slits on top.
- Bake for 45 to 50 minutes until the crust is golden and the filling is bubbling.
- Allow the pie to cool for at least 30 minutes before slicing and serving.
Notes
- Letting the pie cool helps the filling set properly.
- If the crust browns too quickly, tent loosely with foil.
- The flavor deepens as the pie rests, making it even better the next day.
