Description

A comforting, old fashioned dessert that transforms firm green tomatoes into a sweet, spiced pie with a flaky golden crust and a flavor that surprises in the best way.


Ingredients

  • 4 cups green tomatoes, thinly sliced
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons unsalted butter, cut into small pieces
  • 2 pie crusts

Instructions

  1. Preheat the oven to 375°F and position a rack in the center.
  2. In a large bowl, combine the sliced green tomatoes, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Mix gently until evenly coated.
  3. Line a pie dish with one pie crust, pressing it gently into place.
  4. Pour the tomato filling into the crust and spread it evenly.
  5. Dot the filling with small pieces of butter.
  6. Cover with the second crust, seal and crimp the edges, and cut small slits on top.
  7. Bake for 45 to 50 minutes until the crust is golden and the filling is bubbling.
  8. Allow the pie to cool for at least 30 minutes before slicing and serving.
