Description

A light, crisp-on-the-outside, soft-in-the-center meringue dessert topped with whipped cream and fresh berries. Perfect for celebrations or a refreshing treat any time of year.


Ingredients

  • 4 large egg whites
  • 1 cup caster sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, whipped
  • 1½ cups mixed fresh berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper and draw a 7-inch circle as a guide.
  2. In a clean mixing bowl, beat the egg whites on medium speed until soft peaks form. Gradually add sugar, one tablespoon at a time, beating until stiff, glossy peaks form and sugar is fully dissolved.
  3. Gently fold in the cornstarch, vinegar, and vanilla extract with a spatula without deflating the mixture.
  4. Spoon the meringue onto the parchment paper, using the circle as a guide. Shape into a round with a slight dip in the center.
  5. Bake for 90 minutes. Then turn off the oven, leave the door slightly open, and let the pavlova cool completely inside.
  6. Whip the cream until soft peaks form. Spread it over the cooled pavlova and top with fresh berries just before serving.

  • Ensure the mixing bowl is grease-free for the egg whites to whip properly.
  • Use room temperature eggs for best volume.
  • Let the pavlova cool slowly in the oven to prevent cracking.
