Instructions
- Prepare a tray lined with parchment paper.
- In a mixing bowl, combine crushed pineapple, condensed milk, crushed graham crackers, melted butter, and vanilla extract.
- Stir until the mixture forms a thick, sticky dough.
- Chill the mixture for 20 minutes to make it easier to handle.
- Scoop portions and roll them into smooth balls.
- Coat each ball evenly with shredded coconut.
- Place on the tray and refrigerate for 1 to 2 hours until firm.
- Garnish with maraschino cherries if desired and serve chilled.
