Description
Soft, buttery Pineapple Cookies filled with sweet-tangy pineapple jam. These golden treats are crumbly on the outside, chewy on the inside, and taste like sunshine in every bite.
Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1/3 cup powdered sugar
- 2 tablespoons cornstarch
- 2 egg yolks
- 1 teaspoon vanilla extract
- 1 cup pineapple jam (thickened and cooled)
- 1 egg yolk + 1 teaspoon milk (for egg wash)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
- Cream butter and powdered sugar until light and fluffy. Add egg yolks and vanilla, mixing until smooth.
- Gradually fold in flour and cornstarch until a soft dough forms.
- Take small portions of dough, flatten slightly, and add a teaspoon of pineapple jam in the center.
- Seal and roll into a ball, then place on the baking tray and brush with egg wash.
- Bake for 15–18 minutes or until the tops are golden and fragrant.
- Cool completely on a wire rack before serving or storing.
Notes
- Use thick pineapple jam to prevent leaking during baking.
- Chill the dough if it becomes too soft to handle.
- Let cookies cool fully before storing for maximum crispness.
