  • 2 pounds Russet Potatoes, peeled and grated
  • 1 medium Yellow Onion, grated
  • 2 large Eggs
  • 1/4 cup All-Purpose Flour
  • 1 1/2 teaspoons Salt
  • 1/2 teaspoon Ground Black Pepper
  • Vegetable Oil, for frying
  • Sour Cream, for serving (optional)

Instructions

  1. Heat a heavy skillet over medium heat and add enough oil to coat the bottom.
  2. Grate the potatoes and onion, then wring them out in a clean towel to remove excess moisture.
  3. In a bowl, mix the shredded potatoes and onion with eggs, flour, salt, and pepper.
  4. Ensure the skillet is hot and the oil is shimmering but not smoking.
  5. Scoop about 2 tablespoons of the batter and gently flatten into rounds in the skillet.
  6. Fry for 3–4 minutes per side until golden brown and crispy.
  7. Remove and drain on paper towels. Sprinkle with a little extra salt if desired.
  8. Serve hot with sour cream or applesauce.
