Instructions

  1. Preheat oven to 375 degrees Fahrenheit and lightly butter a 9×13 inch baking dish with the unsalted butter.
  2. In a saucepan over medium heat, combine heavy cream, whole milk, minced garlic, salt, black pepper, and fresh thyme. Warm until heated through but do not boil.
  3. Arrange a single layer of thinly sliced potatoes evenly in the prepared baking dish.
  4. Pour a portion of the warm cream mixture over the potatoes and sprinkle with a layer of cheddar and Gruyere cheese.
  5. Repeat layering potatoes, cream mixture, and cheese until all ingredients are used, finishing with cheese on top.
  6. Cover the dish with foil and bake for 45 minutes.
  7. Remove the foil and continue baking for 20 to 25 minutes until the top is golden brown and the potatoes are tender when pierced with a knife.
