Instructions
- Preheat oven to 375 degrees Fahrenheit and lightly butter a 9×13 inch baking dish with the unsalted butter.
- In a saucepan over medium heat, combine heavy cream, whole milk, minced garlic, salt, black pepper, and fresh thyme. Warm until heated through but do not boil.
- Arrange a single layer of thinly sliced potatoes evenly in the prepared baking dish.
- Pour a portion of the warm cream mixture over the potatoes and sprinkle with a layer of cheddar and Gruyere cheese.
- Repeat layering potatoes, cream mixture, and cheese until all ingredients are used, finishing with cheese on top.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and continue baking for 20 to 25 minutes until the top is golden brown and the potatoes are tender when pierced with a knife.
