Description

Potatoes O’Brien is a crispy, colorful side dish made with diced potatoes, bell peppers, and onions. Perfect for breakfast or brunch, it’s quick to make, full of flavor, and totally satisfying.


Ingredients

  • 3 large russet potatoes, peeled and diced
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)

Instructions

  1. Heat a large skillet over medium-high heat and add 2 tablespoons of oil.
  2. In a bowl, toss diced potatoes with a pinch of salt and pepper.
  3. Add potatoes to the hot skillet in an even layer and cook undisturbed for 5–7 minutes until golden on the bottom.
  4. Flip potatoes, add more oil if needed, and allow other sides to crisp.
  5. Add bell peppers, onions, and garlic. Stir to combine.
  6. Cook for 8–10 more minutes until veggies are tender and potatoes are fully crisped.
  7. Season with paprika (if using), and adjust salt and pepper to taste.
  8. Serve hot with your favorite breakfast items.

  • Parboil potatoes before frying for extra crispiness.
  • Use a cast iron skillet for best results.
