Description
Potatoes O’Brien is a crispy, colorful side dish made with diced potatoes, bell peppers, and onions. Perfect for breakfast or brunch, it’s quick to make, full of flavor, and totally satisfying.

- 3 large russet potatoes, peeled and diced
- 1 medium red bell pepper, diced
- 1 medium green bell pepper, diced
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 3 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika (optional)
Instructions
- Heat a large skillet over medium-high heat and add 2 tablespoons of oil.
- In a bowl, toss diced potatoes with a pinch of salt and pepper.
- Add potatoes to the hot skillet in an even layer and cook undisturbed for 5–7 minutes until golden on the bottom.
- Flip potatoes, add more oil if needed, and allow other sides to crisp.
- Add bell peppers, onions, and garlic. Stir to combine.
- Cook for 8–10 more minutes until veggies are tender and potatoes are fully crisped.
- Season with paprika (if using), and adjust salt and pepper to taste.
- Serve hot with your favorite breakfast items.
Notes
- Parboil potatoes before frying for extra crispiness.
- Use a cast iron skillet for best results.
- Don’t overcrowd the pan or the potatoes will steam instead of crisp.
