- 1 cup chopped or sliced almonds
- 1 cup pumpkin seeds
- 1 cup sunflower seeds
- 1 cup dried blueberries
- 1/2 cup honey
- 3 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 325 degrees Fahrenheit.
- In a large bowl mix oats, almonds, pumpkin seeds, sunflower seeds, cinnamon, and salt.
- Add melted coconut oil, honey, and vanilla extract then stir to coat evenly.
- Spread the mixture on a parchment lined baking sheet in an even layer.
- Press the granola down lightly with a spoon to help clusters form.
- Bake for 20 to 25 minutes stirring once halfway through.
- Let the granola cool completely then fold in dried blueberries.
- Store in an airtight container and enjoy with yogurt, milk, or as a snack.
