  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon ground nutmeg
  • 8 ounces cooked pasta (penne, fettuccine, or choice)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and garlic. Sauté for 3 to 4 minutes until soft and fragrant.
  3. Stir in pumpkin purée, vegetable broth, salt, pepper, and nutmeg. Simmer for 5 minutes.
  4. Lower heat, add heavy cream, and simmer for another 3 to 5 minutes, stirring frequently.
  5. Add grated Parmesan cheese and stir until melted and smooth.
  6. Adjust seasoning if needed. If the sauce is too thick, add a splash of broth.
  7. Toss cooked pasta into the sauce and coat well.
