Ingredients
Scale
- 8 slices thick-cut brioche bread (slightly stale)
- 1/2 cup pumpkin puree
- 3 large eggs
- 1 cup milk
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Pinch of salt
- 2 tablespoons butter
- 1/4 cup pumpkin puree (for syrup)
- 1/2 cup maple syrup
- 1/2 teaspoon cinnamon (for syrup)
- 2 tablespoons water
- 1/2 teaspoon vanilla extract (for syrup)
Instructions
- Preheat a skillet or griddle over medium heat.
- In a mixing bowl, whisk together pumpkin puree, eggs, milk, brown sugar, vanilla, cinnamon, nutmeg, and salt until smooth.
- Melt butter in the skillet until lightly sizzling.
- Dip each slice of bread into the pumpkin mixture, allowing it to soak for about 20 seconds per side.
- Cook the soaked bread on the skillet for 3 minutes per side until golden brown and crisp.
- In a small saucepan, combine syrup ingredients (pumpkin puree, maple syrup, cinnamon, water, and vanilla).
- Simmer the syrup over medium heat for 5–7 minutes until slightly thickened.
- Serve the French toast warm, drizzled with homemade pumpkin syrup and topped with whipped cream if desired.
Notes
- Use day-old bread for the best texture and to prevent sogginess.
- Keep cooked slices warm in a 200°F oven while finishing the batch.
- Add a splash of cream to the syrup for a richer version.
