Instructions
- In a large bowl, whisk together mascarpone cheese, pumpkin purée, powdered sugar, vanilla extract, and pumpkin pie spice until smooth.
- In a separate chilled bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the pumpkin mixture until combined.
- Dip ladyfingers quickly into the cooled coffee and line the bottom of an 8×8-inch dish.
- Spread half the pumpkin cream mixture over the ladyfingers.
- Repeat with another layer of coffee-dipped ladyfingers and the remaining cream mixture.
- Cover and refrigerate for at least 6 hours or overnight for best flavor.
- Before serving, dust the top with cocoa powder and a sprinkle of ground cinnamon if desired.
