- 1 cup strong brewed coffee or espresso, cooled
- 8 oz mascarpone cheese
- 1 cup heavy cream
- 3/4 cup pumpkin puree
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 teaspoons pumpkin pie spice
- Pinch of salt
- Cocoa powder + cinnamon, for dusting
Instructions
- In a bowl, beat mascarpone, pumpkin puree, powdered sugar, vanilla extract, pumpkin pie spice, and salt until smooth.
- In a separate bowl, whip heavy cream to soft peaks.
- Gently fold whipped cream into the pumpkin mascarpone mixture until light and fluffy.
- Pour cooled coffee into a shallow dish. Quickly dip ladyfingers one at a time for 1–2 seconds per side.
- Layer dipped ladyfingers in a 9×9-inch dish. Spread half the pumpkin cream over the top.
- Repeat with another layer of dipped ladyfingers and the remaining cream.
- Cover and refrigerate for at least 4 hours or overnight.
- Before serving, dust with cocoa powder and cinnamon.
