- 4 medium flour tortillas
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1 medium bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 1 tablespoon olive oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Heat a skillet over medium heat.
- Mix mozzarella and cheddar cheese together in a bowl.
- Add olive oil to the skillet and sauté bell pepper and onion until soft.
- Place one tortilla in the skillet, add cheese and vegetables, then top with another tortilla.
- Cook until golden, flip carefully, and cook until cheese melts.
- Remove from heat, rest briefly, slice, and serve.
