Instructions
- Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
- In a medium bowl, whisk together flour, baking powder, salt, and sugar.
- In a separate large bowl, whisk eggs, milk, oil, lemon juice, lemon zest, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Pour batter into the prepared pan and gently tap to remove air bubbles.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar before serving.
