- 1 small zucchini, thinly sliced
- 1 small eggplant, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1/2 small red onion, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 2 garlic cloves, minced
- 1/2 cup tomato sauce
- 1 teaspoon Italian herbs
- Salt and pepper, to taste
Instructions
- Preheat your oven to 475°F (245°C). If using a pizza stone, place it inside while heating.
- Toss zucchini, eggplant, bell peppers, and onion with 1 tablespoon olive oil, garlic, salt, pepper, and herbs. Roast or sauté until tender.
- Lightly dust parchment paper with cornmeal. Roll out pizza dough into a 12-inch circle and place on the parchment.
- Spread tomato sauce over the dough, leaving a small border. Add mozzarella and parmesan, then arrange the vegetables in a spiral pattern.
- Transfer the pizza with parchment to the hot stone or baking sheet. Bake for 12–15 minutes until crust is golden and cheese bubbles.
- Brush the crust with olive oil or garlic butter. Add extra herbs or red pepper flakes if desired.
- Cool slightly before slicing. Serve warm and enjoy.
