Description
A refreshing no-bake pie made with crisp apples, juicy blackberries, and a nutty date crust. Naturally sweetened and beautifully chilled for the perfect summer dessert.
Ingredients

- 1 cup raw almonds
- 1 cup Medjool dates, pitted
- 1 tablespoon coconut oil
- Pinch of salt
- 2 apples, thinly sliced
- 1 1/2 cups blackberries
- 1 tablespoon lemon juice
- 1–2 tablespoons maple syrup (optional)
- 1 tablespoon chia seeds or ground flax (optional)
- Optional garnish: extra berries, mint leaves, edible flowers
Instructions
- In a food processor, pulse almonds until finely ground. Add dates, coconut oil, and salt. Blend until sticky. Press into a tart pan and chill.
- Thinly slice apples and toss with lemon juice to prevent browning.
- Combine apples with blackberries, maple syrup (if using), and chia seeds. Let sit for 5–10 minutes.
- Spoon fruit filling into the crust and arrange as desired.
- Chill the pie for at least 2 hours before serving.
Notes
- If dates are dry, soak in warm water for 10 minutes first.
- Chia seeds help the filling set but are optional.
- Use parchment in the tart pan for easier removal.
