- 1 pound ground beef, 80 percent lean
- 2 cups freshly grated red cheddar cheese
- 4 brioche burger buns
- 4 large lettuce leaves
- 1 large tomato, sliced into 4 thick slices
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat a heavy skillet or griddle over medium heat until hot but not smoking.
- In a mixing bowl, gently combine the ground beef with salt and black pepper. Divide into 4 equal portions and shape into patties slightly wider than the buns.
- Lightly oil the skillet if needed, then place the patties onto the hot surface.
- Cook the patties for 3 to 4 minutes per side until browned and cooked to your desired doneness. Remove patties briefly from the pan.
- On the same skillet, sprinkle about 1/2 cup grated red cheddar into four separate piles. Allow the cheese to melt and bubble.
- Place each cooked patty on top of the melting cheese, then immediately place the bottom half of a brioche bun on top.
- Let the cheese cook for 1 to 2 minutes until golden and crisp around the edges.
- Carefully flip so the bun is underneath and the crispy cheese skirt wraps around the patty.
- Top with lettuce and a slice of tomato, then close with the top bun.
- Serve immediately while the cheese skirt is warm and crisp.
