Reese’s Chocolate Chip Cookie Bites

  • Total Time: 25 minutes
  • Yield: 24 cookie bites
  • Diet: Vegetarian

Description

Soft, chewy bite-sized cookies loaded with semi-sweet chocolate chips and chopped Reese’s peanut butter cups, delivering gooey pockets of chocolate and peanut butter in every irresistible morsel.

Ingredients

  • Unsalted Butter: 1/2 cup (113 g), softened
  • Granulated Sugar: 1/2 cup (100 g)
  • Brown Sugar: 1/2 cup (packed, 110 g)
  • Egg: 1 large
  • Vanilla Extract: 1 teaspoon (5 ml)
  • All-Purpose Flour: 1 1/2 cups (190 g)
  • Baking Soda: 1/2 teaspoon (2.5 g)
  • Salt: 1/4 teaspoon (1.5 g)
  • Semi-Sweet Chocolate Chips: 1 cup (170 g)
  • Reese’s Peanut Butter Cups: 1 cup (chopped, about 8 to 10 standard cups, 140–160 g)

Instructions

  1. Preheat Your Equipment: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Combine Ingredients: In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla. In a separate bowl whisk together flour, baking soda, and salt. Gradually add the dry mix to the wet mixture until just combined. Fold in the semi-sweet chocolate chips and chopped Reese’s pieces.
  3. Prepare Your Cooking Vessel: Using a cookie scoop or tablespoon, portion dough into uniform balls and place them 2 inches apart on the prepared baking sheet.
  4. Assemble the Dish: If desired, press a few extra chocolate chips or small Reese’s pieces on top of each dough ball for an attractive finish.
  5. Cook to Perfection: Bake for 8 to 10 minutes, until edges are golden and centers remain soft. For chewier centers remove at the lower end of the time range.
  6. Finishing Touches: Let cookies rest on the baking sheet for 2 minutes after removing from the oven, then transfer to a cooling rack to finish cooling.
  7. Serve and Enjoy: Serve warm for melty pockets of peanut butter and chocolate, or cool completely for easy packing and sharing.

Notes

  • Chill Dough: Chilling dough for 20 minutes helps prevent excessive spreading for thicker bites.
  • Underbake Slightly: Remove when centers are still soft to achieve chewy texture after cooling.
  • Storage: Store in an airtight container at room temperature up to 5 days, or freeze baked cookies up to 3 months.
  • Keep Soft: Store with a slice of bread in the container to maintain softness.
