Description

Ingredients

  • 1 whole chicken (or 1.5 lbs chicken pieces)
  • 1 cup penne pasta, uncooked
  • 2 leeks, cleaned and sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs (optional, thyme or rosemary)

Instructions

  1. Preheat the oven to 400°F (200°C). Season the chicken with olive oil, salt, pepper, and fresh herbs. Roast for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  2. While the chicken is roasting, bring a pot of salted water to a boil and cook the penne pasta according to the package instructions. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add the sliced leeks and sauté for 5-7 minutes, until they become soft and golden.
  4. Add garlic to the pan and sauté for another minute. Pour in the chicken broth and bring it to a simmer. Stir in the cream and let the sauce thicken slightly.
  5. Once the chicken is roasted, remove the skin and shred the meat into bite-sized pieces. Add the cooked pasta to the skillet with the leek sauce and toss to combine.
  6. Stir in the shredded roast chicken and toss again. Taste and adjust seasoning with salt and pepper.
  7. Serve the pasta in bowls, topped with fresh herbs and a drizzle of olive oil if desired.

Notes

  • For extra crispy skin, broil the chicken for the last 5 minutes of cooking.
  • Use leftover chicken for an even quicker meal.
  • If you prefer a lighter version, substitute heavy cream with half-and-half or milk.
